Question about monster attacks

Im reading the first monster in the Monsters and Treasure (green book) Aboleth, realized I havent played in a while so Im not 100% sure how I use to run the number of attacks creatures have.

So using this example it has 4 tenticle attacks but it has several other attacks in the Special area.

Would the creature sacrifice one of its tenticle attacks to do one of the special or all of its tenticle attacks?

One special ability may be

One special ability may be used in the combat round or; the four tentacle attacks or; a spell can be used. Slime is an inherent special ability that is related to touch attacks since it coats the creature's body and is a freebie effect. Darkvision is just how it sees so is also a freebie.
